Wrap up summer vacation with delicious Quesadillas!

 
Can you believe the holiday season is almost over? Time flies! Although I no longer have school-age children (they’re all grown up now and I’ve even become a proud grandparent), I haven’t forgotten how stressful it can be as a working mom to ensure those little mouths get something nutritious every day.
 
It takes a village to raise a kid! I remember getting lots of help from family and friends back in the day. So, don’t hesitate to ask for help when you need it.
 

Deliciously cheesy Quesadillas

To make your life a bit easier, here’s a simple and delicious meal idea: quesadillas! They’re quick, healthy, and sure to be a hit with the kids.
 
For 2 quesadillas
 
  • ½ tablespoon olive oil
  • ½ red bell pepper, diced or sliced
  • ½ green bell pepper, diced or sliced
  • A handful of mushrooms, sliced
  • ½ medium onion, diced or sliced
  • ¼ teaspoon salt and pepper
  • ¼ teaspoon red pepper flakes (optional)
  • Leftover ham, chicken, sausage, ground beef (optional)
  • About 8 heaping tablespoons of grated cheese (mozzarella, Monterey Jack)
  • Any herbs you have (basil, parsley, spring onions)
  • 4 tortilla wraps (25 cm/10 inch size)

Instructions
 
  1. Heat ½ tablespoon of olive oil in a frying pan.
  2. Stir-fry the cut vegetables for 3-5 minutes, then season with salt, pepper, and red pepper flakes (if using).
  3. Remove the stir-fried vegetables from heat and let cool for a few minutes.
  4. Place a wrap on a cutting board, start with a layer of grated cheese, and add your toppings.
  5. If using shredded meat, sprinkle it evenly on the wrap.
  6. Spread the stir-fried vegetables as the next layer and add any herbs.
  7. Finish with another layer of grated cheese.
  8. Top with the second wrap.
  9. Heat a frying pan and bake the quesadilla until the cheese melts and the wrap is crisp and golden, 2-3 minutes per side. Be careful not to let it get too dark.
  10. Repeat with the other wraps.
  11. Cut the quesadilla into wedges and serve immediately.
